Quick Fix Macaroni Salad For Those In-Between Meals Hunger Pangs: Recipe of The Day

Life in the last six months has been like an extended holiday for me, right from the day my husband told me about our movement to China. And with the mere mention of holiday, all that comes to my mind is FOOD. Yes my lovelies, I have been on a crazy and immense food indulging spree since the September of 2013.  Two months of crazy partying before leaving Hyderabad, then 2 months of exploring amazing China Food, one month of Christmas and New Year festive food indulgence, followed by a ten day trip to Delhi where I hogged as if it were the last few meals of my life and then back to Chinese New Year Celebrations festivities which meant FOOD, FOOD AND MORE FOOD.

GOD…!!! I need a total detox to shed those extra pounds, because under the layers of all my clothes, I can see my waist line increasing. And before summers hit the city, I really want to fit into all my sexy summer dresses. In my previous post I had explained about the detox diet  (Combat Winters With Good Food And Some Easy Health Tips,   also read Diet & Easy Tips For Weight Loss) and now I’m all determined to follow it in full swing and focus more on workout despite the irritating cold. Its time to chase a deadline and achieve desired results.

With an intense low carb diet, one tends to feel hungry a lot. And these hunger pangs can lead you astray from the diet unless dealt with utmost caution and sincerity. So today I’m going to share my favorite salad recipe that I use to kill my in-between meal hunger pangs. I call it a simple “Macaroni Salad”.

INGREDIENTS:

  • Macaroni- 100  gms
  • Onions- 1 finely chopped
  • Bell Peppers- Red, Green & Yellow 1 each Finely Chopped
  • Tomato- 1 Finely shopped
  • Cucumber- 1 Finely chopped
  • Thousand Island Dressing- 1 spoon
  • Mayonnaises – 1 spoon (I usually avoid it, nut incase you want to add some more flavor and taste to your salad, add it)

METHOD:

Take 100 gms of macaroni and boil it till it gets cooked. Add some salt to the water while boiling. When the macaroni is cooked, drain the water out and splash some cold water on the cooked macaroni and drain again till dry.

Now finely chop all the veggies mentioned above. You can also ad other veggies of your choice, the more the vegetables, the better is the texture and quantity of the salad.

Mix all the finely chopped veggies with the macaroni in a big bowl and add some Thousand Island Dressing, you can also use some alternative dressing of your choice, but ensure to use in a limited amount. I avoid  mayonnaise, because of the calories and use some lemon instead. However if you want to add some flavor and deliciousness to the salad, then add one spoon of mayonnaise.

Mix all the salad ingredients well and tadaa…. your Salad is ready…!!!! Its simple, convenient, less time consuming, full of nutrition and delicious enough to curb all your hunger pangs.
